<description>&#60;p&#62;For a lovely variation on your soda bread, head over to Real Foods and get some barley flour. Has a nice nutty taste to it. I use it half and half with white or wholemeal. &#60;/p&#62;
&#60;p&#62;Natural yogurt is a good alternative to buttermilk. If you want to really spoil yourself, try a mix of double cream and whole milk.&#60;/p&#62;
&#60;p&#62;The recipe I use (Dan Lepard's from Baking with Passion) has 30 minutes at 230C. If you find it's damp in the middle, try cutting into it more - right to the bottom. Or press it out flatter before putting in the oven.

<description>&#60;p&#62;Dave, just done some more research - think that it is because I used wholemeal (previously used white) bread flour.&#60;/p&#62;
&#60;p&#62;White flour is pretty much 18 mins, tap the bottom of the loaf, if it sounds hollow, job done.&#60;/p&#62;
&#60;p&#62;Apparently wholemeal will take longer, and the trick is to skewer it after 20 mins, and then every few mins until skewer comes out clean.

<description>&#60;p&#62;@Liz, I find that cycling actually helps with any SAD effects: can't beat exercise in the fresh air and a bit of sunshine! I do think there's been viruses, bugs etc. doing the rounds when we had warm weather during our 'early Spring' recently. Maybe also that because the weather has been okay this winter, not so much ice and snow, that we're all out on the bikes a lot more than we have been the past few years. Unexpected levels of winter exercise may have helped to knacker out a few folk?

I think your body is working harder to keep warm if you are out in the cold/wet and you are probably burning more calories than you think.  A cold can knock you off kilter if you do not get some rest.  Also there is SAD and I found the year before last a slightly defeatist attitude made me feel very tired.

&#60;p&#62;300g wholemeal spelt flour (or any bread flour, really)&#60;br /&#62;
5g sea salt&#60;br /&#62;
10g baking powder&#60;br /&#62;
230ml  buttermilk (If you dont have buttermilk, put normal milk in a jug, add a tablespoon of lemon juice, leave for 5 minutes and thats homemade buttermilk!)&#60;/p&#62;
&#60;p&#62;Method&#60;/p&#62;
&#60;p&#62;Preheat the oven/baking sheet to 230°C/gas mark 8. While it preheats (and your milk is souring), weigh the dry ingredients into the bowl and blend together.&#60;/p&#62;
&#60;p&#62;Add the buttermilk and, using a spoon, mix the ingredients together for about 2 minutes. The moment all the ingredients have mixed together and you have a sticky dough, flour your work surface and tip the dough onto it. Then, cupping the dough between your floury hands, shape it into a round and place directly onto your baking sheet.&#60;/p&#62;
&#60;p&#62;Using a scraper / knife, cut a cross deeply into the dough and bake for 15-20 minutes, until your soda bread has a great golden crust and sounds hollow when tapped on the bottom.&#60;/p&#62;
&#60;p&#62;Adapted from a 'fabulous baker brothers C4 recipe' and made more idiot proof by me.&#60;/p&#62;
&#60;p&#62;Enjoy :-) &#60;/p&#62;
&#60;p&#62;It really is a doddle, lovely warm, and last a few days. p.s. you can use normal flour in an emergency - consistency is different, but still quite nice.
