In Ukraine borscht will have lots of chunky bits (including beets, cabbage, carrots etc) and topped with sour cream. You need a piece of old rye bread to make it and warm weather (I think). We don't make it in Poland. A Russian lady with whom I stayed in Tuva gave me her recipe and I have it written down. She also made me borscht. Not sure what I did to achieve Optimus Prime on that one. Maybe just very good taters (I usually use old spuds) and very nice leek. I was also in an experimental in-between summer and winter jacket which doesn't have a hood and ended up with a wetter head while cycling than I can remember for a long time.
