Thanks Bill, all sound good. Knew I did not dream it. There was a Polish Restaurant in London that my hill walking buddy used to love. Closed Inthink but was old school

@gembo The internet says that there is one region in Poland where they use the brine from pickled cukes (pickled in brine, not vinegar) to make barszcz.

Polish barszcz tends to be strained and without chunky bits. In Ukraine borscht will have lots of chunky bits (including beets, cabbage, carrots etc) and topped with sour cream. Both very nice.

Ok not rancid but fermented in brine - Cukes?

Cucumber/courgette? Ogorki Kiszone?

Maybe also red onions

Any where close?

@gembo

a rancid onion topping in real borscht?

Never heard of that. Maybe in borscht, never in barszcz.

Also what is the name of the drink made out of old bread that is dying out due to Fanta and Coca Cola (Kvass)

Correct, kvas (which means sour/acid). You need a piece of old rye bread to make it and warm weather (I think). We don't make it in Poland. A Russian lady with whom I stayed in Tuva gave me her recipe and I have it written down. She also made me borscht. It was delicious.

You can also get in Eastern European shops over here but I am not a big fan(ta).

@bill I like that egg in soup. On borscht I am gonna ask again, is there not a rancid onion topping in real borscht?

Also what is the name of the drink made out of old bread that is dying out due to Fanta and Coca Cola (Kvass)

I also made the best ever potato and leek soup I have ever made last week. Not sure what I did to achieve Optimus Prime on that one. Maybe just very good taters (I usually use old spuds) and very nice leek. Only used salt and pepper as seasoning as was saving the stock cube for the Rissotto with aubergine and butternut squash that came later.

@IWARTS Spring is the time to eat young beetroot soup not borscht/barszcz, which is old beetroot soup. Everyone knows that, IWARTS. Sample recipe

Thanks! It was a good, good soup. Tasted good, looked good and was, I suspect, bursting with minerals and goodies.

The tricks are; Young nettle tops, no stalks (stringy) and a pinch of mace or nutmeg in the onions when you fry them.

I seemed to pick the worst half-hour window for my commute home last night and made the mistake of not putting full waterproof trousers on. I was also in an experimental in-between summer and winter jacket which doesn't have a hood and ended up with a wetter head while cycling than I can remember for a long time. As I approached town I found that the water running into my eyes and mouth was really quite stingy and unpleasant to the taste for good measure - not sure if the rain was particularly acidic or if it was absorbing chemicals from the glue etc. in my helmet?!
