There is at least 1 tunnel on the path out to Balerno. (I've not been all the way out since 2012, and I have the feeling there's at least 2.)

I'd count the one under the canal just west of the turnoff to Balerno.

How much further afield? There was something in the news about a tunnel near Bath (or do I mean Bristol?) being opened up for cycling not so long ago...

Neidpath is the Peebles tunnel.
There's one tunnel on the Balerno route, just before Colinton.
There's 2 short tunnels just before and after Auchendinny (Dalmore Mill) on the route to Penicuik.
K, the best person I can think of would be Simon Douglas (K-Burn on Flickr).
Further afield there is one on the Speyside Way just south of Craigellachie.
All the big tunnels I know have been mentioned so I'll throw in a tiny pathetic one just for good measure:
If you go along the WoL path from Warriston Road here (was being revamped when the streetview car rolled by, is now open) there's a very tight chicane down the back of St Marks Park that takes you under a railway yard by a tunnel. It's very similar to the one under the canal that chdot mentioned.
Whitrope Tunnel on the Waverley line was accessible until 1995 apparantly. Glenfarg tunnel still accessible?
Major shiver down the spine thinking about going through either of those.
On a smaller scale there are a few Victorian Grotto style tunnels about. Probably just about cyleable.
Closest in Dalkeith Country Park. One at Falkland and another at the Hermitage at Loch Tay. Possibly one at the Dunkeld Hermitage too.
Does the one under the new Dalkeith bypass east of the new school count? Or is that technically a 'bridge'?
Teeny one by the Water of Leith as well. Trying to think of how to explain where it is. There's a bin depot or something on the opposite bank - and the path is just a dire track at that point.
EDIT: I tihnk that's the one Allebong has mentioned.
Oh, Granton, on the path that heads down to the shore from the red bridge. Might be thought of as an 'underpass'...
I think a more relevant question is what dark motivations kaputnik has for asking about these dark, secluded and funny-smelling places.
There's a filled in tunnel under Lasswade on the old railway to Polton.
There's also one under Coburg Street in Leith, which ran to North Leith station and onwards into the Docks
Isn't there one on the Peebles-Innerleithen route? I seem to remember they had bat problems.
There are two tunnels at Falkirk, the Hallglen to the east and the one that takes you to the Falkirk Wheel. Both on the canal and accessible to bikes as I cycled them a few weeks ago.

I had it in my mind there was a 2nd. But I only cycled as far west as the Bridge Rd turnoff this year, so I wasn't sure if there was one afterwards. (And, clearly, there isn't.)

Did the Falkirk Wheel tunnel only yesterday when I went to buy my jacket at Leckie's. Sure, it's got one of those "please dismount" signs but I shouldn't think you'd encounter too many peds especially at this time of year, and you can always stop and get off. A couple of 'rainy' spots inside and a section where some of the tunnel lining had collapsed onto the walkway, so lights definitely recommended as it gets pretty dark in there.
I hadn't meant to go through it but I misread the GPS arrow and missed my exit! Cycling through made an interesting comparison to going through on the Wheel's barge trip.
And surely the delightful Telfer Subway counts? ;-) I just love negotiating the big wide gutter to go to and from the play park above Lidl's.
I think the definition of a tunnel should include any covered infrastructure that make a pleasing noise when you go "Woooowoooo Echoooo Jeckoooo".
Using my definition I'll add Pinkhill Station and the underpasses in East Craigs.
Note to self: Remember not to go Woooowoooo Echoooo Jeckoooo when you don't have the kids aboard...

Believe Marks and Spencer's at the gyle was particularly Hellish today. personally, I shop in Scotmid in Balerno - shop has all you need, though has gone quite pricey on the wine. None of which is selling so hoping for big reductions in January. There is also a smaller Scotmid that does cheaper wine. The society give £700k a year to good causes. Applications available in store. Costs a pound to join, and you get vouchers back to spend in store. membership entitles you to attend OGM in October and ÀGM in April where voting occurs.

I would be pedantic and say I was thinking of structures that were actually tunnelled through the rock (or whichever other substrate) rather than being formed by the construction of other structures around them.
So for the purposes of the argument/discussion that prompted me to begin with, I couldn't allow underpasses or subways such as the Telfer, however they could well be classed as tunnels for other people's specifc uses.
@Fimm - were you thinking of the Two Tunnels route?
