Which fabric shops of Edinburgh, if any, are competitively priced?

I wouldn't say Mandors is particularly competitive since there's not all that much competition. There's a little shop on Morningside Road. John Lewis has good fabric although not cheap. But if you want something reasonably priced head to Rejects in Kirkcaldy or look on eBay.

Cloth Shop on Bonnington Road and Edinburgh Fabrics next to Bargain Stores have way more than Mandors..
Mandors might have a wee wummin called Binty or somesuch who will get crabbit if you want to make an unlined curtain and make it with 1" tape and not 3" tape. Usually the staff are very helpful though.
No idea whether it is competitively priced as I have never compared.

That Edinburgh Fabrics looks worth a visit. Currently making canvas buckets.
My husband seconds Mandors in terms of quality but not competitiveness, and there is one just down from Surgeon's hall. However, he recommends for cheapness looking online.
