I found this website the other day, it is part of the visitscotland website and I don't see it already posted here. Looks pretty good and plenty of routes around Edinburgh. I am going to try the beaches and castles route as soon as the ice clears a bit.

There used to be excellent beer (orkney, atlas etc) and food (home grown and cooked) at the pub/inn nearest Dirleton castle, but the last time we went there it had changed hands and was dire. Otherwise, a fabulous cycle (the coast is also do-able by bus, and the first buses will pick-up/drop-off pretty much anywhere along the route). Do try to get to Aberlady Bay around sunset, as the geese flying in to land are amazing.

Sounds cool. I may leave the geese for a bus trip though since I don't much fancy cycling all the way home from Aberlady in the dark. ;-) And I'll avoid that pub.

yes, that route recommends start/finish at longniddry. we did it w/out the loop a few weeks ago (ie longniddry to aberlady, lunch on beach, and back for train at dusk). it worked well for short day trip with small person, but not much cycling for the keeners.
