"The North British Distillery in Gorgie took water near the railway tunnel at Meggetland. I don't think it still does."

    Apparently still does!

“There are three things I would say were important about the location of the distillery,” says managing director Alan Kilpatrick.

“Firstly the source of the water which comes from the Pentland Hills [via the Union Canal] and also being well served by the railway at the time was key.

i wonder how water from the pentland hills gets into the union canal?

going the other way there is a big pipe at rose burn just after the bike chute that goes down rose burn cliff that often smells fragrantly of hops. i have always thought it was connected to fountain bridge. [as we know there was neither fountain nor bridge at fountain bridge, threads passim]

the water level in the canal is maintained by a feeder system starting with a reservoir in the Pentland Hills to the south, but including a three mile channel from the River Almond at Mid Calder to the canal close to the Lin's Mill Aqueduct.

including a three mile channel from the River Almond at Mid Calder to the canal close to the Lin's Mill Aqueduct

The canal feeder starts opposite the East Calder water treatment works and (obviously) takes its water from the Almond. But it's Cobbinshaw that is the compensation reservoir. It feeds the Bog Burn, which becomes Murieston Water at Harburn, and which then feeds Linhouse Water at Midcalder, which immediately feeds the Almond.
