Don't need to get all the way, Harthill / Shotts area is close enough.
Many ways to go west. NCN Route 75. Usual funny mixture of road surfaces. Can be done on a tourer. Takes a while.
The canal towpath goes all the way quite flat. Feels like a slog. Again touring bike rather than racer. Often wet.
Routes from north Edinburgh been discussed here when Hankchief led a group through to PoP.
Longer south routes via Lanark out the A70 to Carnwath then turn north west. Via Carluke etc.
If you are looking to go to Harthill then you can go via fauldhouse which we often do from here in Balerno. Go up Fala Hill which is a right turn at the mini roundabout in Fauldhouse.
Or if do not fancy that wee hill continue west out of fauldhouse and take the back road to Shotts.
All of these routes are likely to have a headwind until you turn.

Eventual route was back roads to Bathgate (very nice), along the Airdrie-Bathgate path (nice and quiet, slightly twisty at points), then the main roads through Airdrie and Coatbridge (not recommended, unless you like motor traffic).
Opposite of the Glasgow -> Edinburgh Pedal For Scotland route? Quite scenic around Lithgae
