We do a ~40 mile route round Fife but I expect it will be ~20kn longer if travelling out from Edinburgh. Get an Ordinance Survey map and look for quiet roads I say.
How about to North Berwick and back, which gives the option of bailing out and catching the train if the wind's too bad.
There are a few routes suggested on this thread:
30-50 mile routes
A loop round the Kincardine and Forth Bridges is nice and probably around that mileage?
There are a number in Nick Cotton's "Around Edinburgh" book in the Philips Cycle Tours series - not easy to find now, but I picked up a copy from Metrodale on eBay:

There are all around the 30-40 miles, and designed for single day outings, usually as a loop, with details of the nearest train stations for getting to them.
Disclaimer - I've not (yet) tried any!

out to East Lothian and back always seems to end up about 40-45 miles... Lots of routes and nice back roads to be on.

Easy reach of the city, and if you go 'too far' you can detour to North Berwick and pick up a train home.
p.s. off topic, and forgot to photo when I was passing a few weeks ago, but there are a few direction signs around Athelstaneford with "CTC" above them - any thoughts?

Suspect it goes back to 'the early days' when there weren't many road signs.
Presume AA put some up too (when they weren't warning members about speed traps).
Thanks to all who posted! I love training on Arthur Seat but it does get a bit tedious and it's nice to hit the open road :-)

Not sure if this one is covered....
A favourite route of mine is a loop out to Kirknewton on Long Dalmahoy Road. Then up above gliding field and on back roads into Balerno. Comes in short of 30 but quite good for it's nice uphill westerly aspect. Can be extended towards Carnwath...
